This figure of speech refers to frying eggs.  If you do not ‘flip’ the egg and fry both sides, the bright yellow yolk can be easily seen.  It is sunny side up.  (It looks like the sun.)  If you like eating your eggs like that, in an American restaurant you can order them ‘sunny side up’.  ‘I’d like my eggs sunny side up.’
