This figure of speech also refers to frying eggs.  If you ‘flip’ the eggs and fry both sides, the yellow yolk cannot be easily seen, but it is liquid when you cut into it.  If you like eating your eggs like that, in an American restaurant you can order them ‘over easy’.  ‘I want my eggs over easy.’
